I can't really recommend AI for the desktop due several concerns. A good AI is very resourse hungry, means that an AI which exclusively use local resources, never is very efficient, or it use sources online to a big data centers, with the security and privacy leaks it may have, apart of draining part of your bandwide using it as desktop app.

It's better to use one of the specific online services out there (currently there are over 8.000 different AI apps and services for any task.) corresponding of what you want to do.

I think that is the easiest way to start.
I'm sure you know about the limitations of locally running AI, but i do it on a 16GB GPU workstation laptop, and models that fit work just fine.
https://theresanaiforthat.com/ is an other good source, but I think it's not for local AI's.

 I don't know of a good allrounder AI to run locally, because the models are just too small to be allrounders.

There aren't good alrounders, as they say, who pretend to do everything, only can do these badly. It's way better to use an AI specialized in specific tasks if you want the best results. A Swiss army knife can do a lot of things, but never can substitute a real knife, saw, scissor, screwdriver..... same for "allround" AIs,
