What will happen if I draw too many amps from a modern (decent quality) PC PSU? Will it shut down gracefully, or will it do something worse? I destroyed more than a few of those conventional AC adapters/wallwarts when I was a kid by doing this! But I would like to think that improvements have been made.

I'm worried that my excessive use of LED fans and hard drives (four of them) will make my PSU stage a revolt.

Dow you mean watts or amps? If you're pulling too much amperage - it will (hopefully) blow the fuse or circuit breaker rather than your computer.
However - No matter what PSU or power consumption of your PC - it doesn't affect teh current it draws through PSU.
Therefore, you might mean voltage (Current[a]= Power[w]/Voltage[v], eg 300w psu/120v total draw = only 2.5amp, so can fit 3 amp fuse).
