Aside of all the legal considerations, are these safe ? Revival projects are fine, but I hope these don't come packed with "accidental" malware or anything. I would be willing to give NOLF a try, just to try out its stealth aspects, and compare it with other games of that era.

The original publisher was Fox, who were taken over by Vivendi in 2003, then Activision in 2007 - no-one can find the rights (which is why it's not on GoG). Activision have stated they do not have the rights and ex-Monolith say they don't know either... Guess they didn't find the hidden intel on the secret level...

Also - there's no malware. It's a batch installation, so it installs all the required mods to work.
The "stealth" is not like Thief - it's more like, creeping before a headshot with a silenced pistol / poisoned lipstick, etc...
It's "oldschool" in that the level is truly open. There's even a bunch of FMs somewhere... Mostly for competitive.
Think FPSS (first person stealth/shooter).
